The Pit Beef Stand That Made Chaps Famous

On a Sunday afternoon around noon, the line at Chaps Pit Beef stretches past the door and out along Pulaski Highway, same as it has for decades. Nobody seems annoyed. A man in a Ravens jersey talks to a woman holding a toddler. A few truckers lean against a pickup. The parking lot is a study in patience, and the smell coming off the open pit inside explains why everyone stays put.

Bob Creager has been running Chaps since 1987, when he and his late wife Donna set up shop in a converted strip of commercial space on the northeastern edge of the city, out past the airport sprawl and the big-box corridors of Rosedale. The address — 5801 Pulaski Highway — is not glamorous. The building is not glamorous. None of that matters once someone hands you a sandwich.

Pit beef is Baltimore’s own thing, a regional idiom that gets little attention outside the mid-Atlantic but inspires genuine devotion among the people who grew up eating it. It is not brisket. It is not pulled pork. It is a round roast cooked over charcoal, sliced thin against the grain, piled onto a kaiser roll, and finished with raw onion and a horseradish sauce called tiger sauce that Chaps makes in-house. The outside of the meat chars and crisps; the inside stays pink and juicy. Order it medium rare and mean it.

Creager is in his seventies now, and on most days someone from the family is working the counter or tending the pit. The operation has the feel of a place that has figured out exactly what it is and sees no reason to change. The menu covers pit beef, pit ham, pit turkey, and a few other things, but the beef is why people drive from Annapolis, from D.C., from the Eastern Shore. A basic sandwich runs around ten to twelve dollars, which for the quantity and quality involved is the kind of deal that makes you feel briefly like the world is fair.

The interior is small and utilitarian — a counter, a few stools, some tables, a television usually tuned to sports. There is no atmosphere to speak of beyond the atmosphere of a place that has fed an enormous number of people without any particular fuss. Regulars know to ask for extra tiger sauce. First-timers often make that mistake only once.

What Creager built here is distinct from the gastropub version of this idea, the one where some chef in a nice apron reimagines street food for a crowd that prefers exposed brick. Chaps is the original argument. The pit is real, the charcoal is real, and the man who started the place is often still there. That continuity is not incidental to the experience — it is the experience.

Chaps is open seven days a week, generally from around ten or eleven in the morning until the meat runs out, which on weekends can happen by mid-afternoon. If you go at noon on a Saturday and expect a short wait, recalibrate. If you go at ten on a Tuesday, you might have the counter to yourself. Either way, bring cash, though they do take cards now. Bring an appetite, because the portions are not shy. And if someone offers to share a tip on the right amount of horseradish, listen to them. They have probably been coming here longer than you have.
