Etch keeps a jar of house-made chili oil on every table. It sounds like a small thing, but it tells you something about how Deb Paquette runs her kitchen — obsessively, generously, and without much interest in doing what everyone else is doing.

Paquette has been one of Nashville’s most distinctive chefs for decades, and Etch, which she opened in 2013 in the SoBro neighborhood just south of Broadway, is the clearest expression of what she does. The restaurant sits on the ground floor of a glass office tower — not the most romantic address in the city — but inside it’s warm and purposeful, with an open kitchen, well-spaced tables, and the kind of low-level hum that signals a room full of people who actually came to eat.

The menu resists easy category. Paquette pulls from Mediterranean, Middle Eastern, and Asian pantries without any of it feeling forced or fusion-y. A dish of roasted cauliflower might arrive with harissa, pomegranate, and toasted pine nuts. The duck confit is often paired with something unexpected — a date puree, maybe, or a za’atar-laced grain. The details shift seasonally, but the instinct behind them is consistent: bold flavors, careful balance, nothing on the plate that doesn’t have a reason to be there.

The appetizers are worth building the whole meal around. The hummus is better than it has any right to be at a fine-dining restaurant, and the beef and lamb meatballs with a tomato-saffron sauce have been on the menu in some form for years because they work. If you’re going with a group, order four or five starters and share — that’s when Etch makes the most sense.

Entree prices run $28–$42, which puts it in the upper-middle range for Nashville. The bar program is solid — the wine list is short but thoughtful, and the cocktails lean classic with small twists rather than reaching for novelty. Dessert is worth saving room for; Paquette’s pastry background shows up in things like a brown butter cake or a cardamom-spiced pot de crème that doesn’t try to be anything other than exactly what it is.

The lunch service, which runs on weekdays, is one of Nashville’s better deals — the kitchen puts out a shorter menu at lower price points, and the room is noticeably quieter than dinner. If you want to get a real sense of the food without the weekend crowd, that’s the time to go.

What Etch doesn’t do is perform. There’s no dramatic open-fire theater, no towering architectural plates, no Instagram-bait on the menu. Paquette’s cooking is confident enough that it doesn’t need those things. The chili oil on the table, refilled without being asked, is a better signal of the restaurant’s values than any of that would be.

Reservations are recommended, especially Thursday through Saturday. Parking in the attached garage is validated. The address is 303 Demonbreun Street — easy to find, worth remembering.
