The tom kha soup arrives in a small pot at your table, creamy with coconut milk and bright with galangal and lemongrass, the broth balancing sweet, sour, and savory in the way that only good Thai cooking does. The pad see ew is textbook — wide rice noodles with a proper wok char, egg distributed throughout, the sauce rich and slightly smoky. It sounds simple.
