The brisket is the thing to order first, full stop. It arrives sliced thick, with a bark on the outside that crackles faintly when you press it and a pink smoke ring running beneath the surface like a geological formation. The fat is rendered to silk. It needs nothing, but you will find yourself reaching for a slice of white bread anyway, the way nature intended. The ribs — both beef and pork, depending on the day — are equally serious business, and the pulled pork has enough smoke flavor to make you reconsider every pulled pork sandwich you have ever eaten before this one.
