Nelson de Hoyos, a well-known figure in Greenville’s food scene, is set to open his own restaurant, Pergola, in North Pleasantburg this August. De Hoyos, who has worked with local eateries, consulting on menu development and culinary branding, will lead the restaurant along with his wife and business partner, Leigha de Hoyos.
Pergola’s Concept
Pergola will be a New American concept, with a focus on creative and artistic dishes. The restaurant will feature a biodynamic wine list, crafted by sommelier Brian Hogue, and will have a patio with an outdoor pergola. De Hoyos has mentioned that the dishes will be inspired by his father, Nelson de Hoyos Sr., who is an abstract artist.
The restaurant will be located at 2537 N. Pleasantburg Drive, in the former Travinia and Maverick Biscuit location. De Hoyos has teased ingredients such as wagyu pastrami, homemade pasta, lion’s mane mushrooms, and fermented vegetables.
