Tacos at 2 a.m. and the Best Birria in Montana

Taco Sano started as a food truck, which most people in Missoula already know. What they might not know is that the brick-and-mortar spot on Brooks Street does something the original truck couldn’t quite pull off: a full birria menu, served with consommé deep enough in color it looks almost purple under the dining room lights.

I first went on a rainy Tuesday in October, the kind of evening when Missoula empties out fast and most restaurants feel half-alive. Taco Sano was not half-alive. By six o’clock, the small dining room had a wait. I stood near the door and watched a family at the corner table drag their quesabirria through a cup of broth, the cheese pulling long, the tortilla going translucent at the edges from the dip. I ordered before I even sat down.

The quesabirria tacos are the move here, and I’d argue they’re worth going out of your way for. Three to an order, each one stuffed with slow-braised beef, Oaxacan cheese, onion, and cilantro, the tortillas griddled in the beef fat so they come out with a rust-colored crust. The consommé arrives in a small cup on the side — rich, faintly spiced with guajillo and árbol — and you’re supposed to dip. Do it. Don’t let the tacos sit too long once you start, though, because the crispness fades.

Beyond the birria, the al pastor is worth ordering. They use an actual trompo, the vertical spit that most places skip because it’s a commitment, and the pork comes off it with a char at the edges that you don’t get from a flattop. The street corn — elote — arrives on the cob, mayo, cotija, chili powder, lime. Classic execution, nothing fussy.

Prices are honest. Tacos run roughly $3.50 to $4.50 each, the quesabirria a little more. A full meal with a drink lands most people around $15–$18. They take cards. The room itself is small and not trying to be anything other than what it is: a few tables, counter service, good light, a menu board you can read from the door.

The Brooks Street location isn’t the most polished stretch of Missoula, but it’s close to the University and pulls a mix of students, families, and the kind of people who just want to eat well without a reservation. Weekend evenings fill up early. If you go on a Friday after seven, plan to wait a few minutes or eat at the counter, which honestly I prefer — you can watch the kitchen move, and it moves fast.

What I keep coming back to is that Taco Sano doesn’t hedge. The food is straightforwardly Mexican, cooked by people who know what it’s supposed to taste like, and it shows up on your table that way. Missoula has a lot of good food right now, but specific regional technique executed at this level is still rare enough that it registers. The birria alone is reason to make the drive from wherever you are in town, rainy Tuesday or not.
