Taqueria Los Compadres Fills Up Before 8 a.m

Sometime around 2012, a guy named Ernesto started selling breakfast burritos out of a converted trailer on the north side of Las Cruces, near the intersection of Picacho and Campo. Word got out fast — the kind of word that spreads through construction crews and hospital workers and people who drive in from Doña Ana before the sun is fully up. These days, Taqueria Los Compadres operates out of a small brick building on the same stretch, and if you show up after eight on a weekday, you may wait twenty minutes for a spot at the counter.

I started going because a coworker kept bringing in burritos that smelled better than anything I’d made that morning. The chile colorado here is braised low and slow until the beef practically dissolves, and they fold it into a flour tortilla that’s pressed on the griddle just long enough to get a little char without cracking. That’s it. That’s the move. You can add egg if you want — I usually do on weekdays — and the red chile sauce they spoon on top has a slow heat, the kind that builds over the next ten minutes rather than hitting you immediately.

The menu is short and hand-lettered on a whiteboard, mostly variations on burritos, tacos, and the occasional plate of huevos rancheros. They rotate specials: on the days they have machaca, get it. On Saturdays they sometimes do menudo, which arrives in a styrofoam bowl with a side of dried oregano and diced white onion, exactly as it should. Coffee is drip, poured into foam cups, and it’s fine — this is not a café, it’s a taqueria, and the coffee exists to wash down food, not to be photographed.

Prices are honest. A breakfast burrito runs somewhere between six and eight dollars depending on what’s in it, and nothing on the menu is going to surprise your wallet. You order at the counter, find a seat if you can, and get your food in about ten minutes. The tables are close together, the TV in the corner is usually on a Spanish-language morning show, and there’s a regular crowd that greets the staff by name. I’ve overheard entire city council opinions discussed here over a plate of eggs.

The neighborhood is workaday — a tire shop across the street, a laundromat nearby, a hardware store a block up. This is not a destination corridor. It’s a place people eat because the food is good and it’s been good for years, and that continuity counts for something in a city where places open and close faster than the chile season.

If you’re driving in from out of town and want to understand what everyday Las Cruces actually eats for breakfast, Taqueria Los Compadres is where you go. Skip the menu deliberation. Get the chile colorado burrito with egg, red chile on top. Sit at the counter if you can. Be there by 7:45.
