Blackbird Is Gone. Würst Too. Pull Up a Stool at Fargodome’s Shadow

It’s 6:30 on a Thursday, and the light coming through the windows at Vinyl Taco on NP Avenue has that particular gold-hour quality that makes everything look a little more alive than it probably is. The room is loud in a good way — the kind of loud where nobody’s straining to talk over silence. There’s a playlist going that slides from cumbia to Talking Heads without apology, and the bartender is shaking something over ice with the casual authority of someone who does this twelve times a night and means it every time.

Vinyl Taco opened downtown a few years back and quickly became the kind of place locals steer out-of-towners toward when they want to look like they know things. That it sits on NP Avenue, one of Fargo’s more interesting restaurant corridors, helps. The building is industrial-ish, with exposed ductwork and warm wood tones that keep it from feeling cold. The vibe lands somewhere between festive and genuinely comfortable — not a concept restaurant, not a theme-park version of a taqueria. Just a place that takes its food seriously and its atmosphere loosely.

The tacos are the reason to come. They run about four to six dollars each depending on what you order, and you should order more than you think you need — they’re not tiny, but they invite overzealousness. The birria is the one people talk about, and for good reason: the braised beef is rich, the consommé for dipping is correctly salty and deeply spiced, and the fried cheese edge on the tortilla is the kind of detail that signals someone back in the kitchen actually cares. The mushroom taco holds up as a non-meat option that doesn’t feel like an afterthought. The elote is worth ordering even if you weren’t planning on a side.

The margarita program is taken seriously here. The house version is solid and strong; if you want to spend a bit more, the options with fresh citrus and better tequila are worth it. Expect to pay around twelve to fifteen dollars for a cocktail. The beer list skews toward Mexican lagers and a few locals, which is exactly what the food calls for.

Come hungry and come on the earlier side if you’re going on a weekend — by 8 p.m. the place is full and the wait can stretch past forty-five minutes. There’s no reservation system, so your options are timing it right or accepting that you’ll get a drink and stand for a bit, which, honestly, isn’t the worst outcome. The bar area has decent standing room and the staff moves efficiently enough that you won’t feel ignored.

What makes Vinyl Taco stick is that it doesn’t oversell itself. The tacos are good. The drinks are good. The room feels lived-in rather than staged. Fargo has no shortage of spots chasing the same casual-cool register, but most of them wobble somewhere between the food and the atmosphere. Here, both are landing at the same time — and that’s harder than it looks.

If you’re making a night of the NP Avenue stretch, this is a reasonable anchor. Park once and eat here first. You’ll figure out the rest after.
