Rod Robertson Has Smoked Brisket in DeSoto Since 1987

Ask anyone who grew up in southern Dallas County where their family went after church on Sundays, and a good number of them will mention Rod Robertson without hesitation. Rod’s BBQ Pit has been operating out of the same unassuming building on Hampton Road for decades — and the man himself is usually somewhere nearby, either behind the counter or out back checking the smoker before the lunch crowd rolls in.

You’ll smell it before you see the sign. That’s not a figure of speech; the wood smoke carries across the parking lot and into your car before you’ve even cut the engine. Rod uses post oak, the same wood that Texas pitmasters have argued over forever, and he keeps a slow, low fire going through the night. The brisket that lands on your tray by noon has been in the smoke since the evening before.

When you walk up to order, don’t overthink it. The brisket plate — sliced, with two sides — is what this place is built around. Ask for a mix of lean and fatty if you have any sense, because the fatty end, with its dark bark and soft, yielding interior, is where the work Rod put in really shows. The ribs run out first on Fridays and Saturdays, so if that’s your goal, plan to arrive before noon. The chopped beef sandwich on a plain white bun, dressed with pickles and a little onion, is exactly right if you want something you can eat on the way back to wherever you’re going.

The sides follow the same no-fuss philosophy: pinto beans cooked until they’re practically velvet, potato salad with mustard that has no business being as good as it is, and coleslaw that’s cooling rather than sweet. Nothing here is trying to be interesting. It’s just done correctly, which is harder than it sounds.

Rod is in his sixties now, but regulars say the operation hasn’t changed much since he first fired up the pit. His daughter helps run the front, and on busy days you might spot his son hauling wood. It runs as a family business in the literal sense — the kind where everyone knows their job and does it without drama. The dining room is small and plain, with paper towels on the tables and sweet tea by the pitcher. You don’t come for the atmosphere; you come because the food holds up in a region where BBQ opinions are both strong and well-informed.

Plates run roughly $14 to $18 depending on what you get, which is fair for the quantity and quality. They take cash and card. Hours lean toward lunch — most days they’re open from around 11 a.m. until they sell out, which in Rod’s case can be as early as 2 p.m. on a busy Saturday. Going early is not optional; it’s strategy.

This is the kind of place that doesn’t have much of a web presence and doesn’t need one. The regulars know when to show up, and if you’re lucky enough to be in DeSoto with a free lunch hour and a car that can find Hampton Road, you’ll understand pretty quickly why Rod Robertson’s name still comes up when people talk about this town.
