What is a tofu factory doing open to the public in the middle of Old Town, and why does it smell so good?

Ota Tofu has been operating on Northwest Couch Street since 1911, which makes it one of the oldest continuously running tofu manufacturers in the country. That alone is worth noting. But the more interesting thing is that you can walk in off the street, buy a block of fresh tofu for about two dollars, and go home feeling like you’ve discovered something the rest of the city somehow missed. You haven’t — locals have known about this place for generations — but the experience still carries that particular charge.

The building doesn’t advertise itself aggressively. There’s a modest storefront, a small refrigerated case near the entrance, and the faint, warm, beany smell of soymilk being processed somewhere behind the counter. The staff is efficient and matter-of-fact. Nobody’s going to deliver a speech about heritage or craft. You point at what you want, they hand it over, you pay a remarkably small amount of money, and that’s it.

What you’re buying is fresh tofu — silken or firm — made that morning. The difference between this and the shelf-stable packages at a grocery store is not subtle. The silken variety is almost custard-like, cool and faintly sweet, and it holds up beautifully under a drizzle of good soy sauce and a little ginger. The firm tofu has actual structural integrity without being rubbery, which is a harder balance to achieve than it sounds. They also carry a rotating selection of related products: soy milk, okara, occasionally other items depending on the season and what they felt like making.

Prices are genuinely low. We’re talking a dollar or two for a block, a few dollars for a quart of soy milk. Ota is not trying to extract a premium for the artisanal experience. They’re a manufacturer that happens to sell retail, and the pricing reflects that.

The neighborhood context is worth mentioning. Old Town is a complicated part of Portland — historically significant, economically strained, and in a constant state of negotiation between its past and whatever comes next. Ota Tofu exists in that context as something admirably indifferent to trends. It was making tofu before Portland was a food destination and will probably keep making it after the next wave of restaurant closures reshapes the city again. There’s something quietly reassuring about that.

Go on a weekday morning if you can. They tend to run out of the silken variety by early afternoon, and the freshest batches are available earliest. Parking is annoying in Old Town, as it always is — plan accordingly or take the MAX to the Old Town/Chinatown stop, which puts you about two blocks away.

It’s not a destination in the conventional sense. There’s no menu, no seating, no espresso machine. What there is: exceptional tofu at a price that makes you want to buy more than you need, made by people who have been doing this for over a century and have clearly decided that’s enough of an identity to sustain them. Hard to argue with that math.
